The first codification of this recipe dates back to around the 14th century, in a cookery manuscript called 'Le Viandier', whose author is Guillaume Tirel (also known as Taillevent), a French chef of particular prominence at the time. According to some studies, however, the shortcrust pastry dough was already known around the year 1000 and was used for the preparation of tasty yet simple and delicate desserts that could satisfy the palates of the lords of the time.

Top-quality raw materials are used to prepare the shortcrust pastry in order to guarantee an optimal result; the ingredients are balanced and mixed following precise and particular steps, and the dough is then only worked after it has rested for at least 12 hours at a temperature of 4°C.

The shape, designed to be perfectly in line with the company's brand, is created by patient work entirely by hand, using special moulds.

Baking takes place at 180°C for about 12 to 15 minutes.

• Rosoni integrali con zucchero di canna: prepared with wholemeal wheat flour, spelt flour and brown sugar, for a coarser, fibre-rich dough, suitable for those who do not want to compromise on taste with a more watchful eye on their figure;

• Rosoni al Bergamotto di Calabria: the strength of such an exclusive, refined, delicate and precious product that only grows in Calabria, this line of biscuits is for those who love a delicate, fresh and not at all trivial snack;

• Rosoni alla ‘Liquirizia di Calabria DOP’’: could not possibly be absent given the highly prized production of organic liquorice made in Calabria, which has obtained such a strong and important recognition, the PDO mark.

ALLA LIQUIRIZIA DI CALABRIA DOP: Farina di frumento tipo 00, zucchero, margarina 100% vegetale, burro, uova, aroma vaniglia, polvere di ‘’Liquirizia di Calabria D.O.P.” 5%, agenti lievitanti (difosfati), correttori di acidità (carbonati di sodio), sale.
